Potato Salad
Makes 4-6 servings
Ingredients
Vegetables
- 4 potatoes, boiled, cooled and diced
- 250 ml (1 cup) celery, finely diced (brunoise)
- 2 shallots (or green onions) finely chopped
- 125 ml (1/2 cup) green bell pepper, diced
- 30 ml (2 tbsp) chopped fresh parsley
Spices
- 2 ml (½ tsp) curry powder
- 2 ml (½ tsp) ground cumin
- 30 ml (2 tbsp) soya sauce
- 15 ml (1 tbsp) Viesun™ spirulina powder
- Sea salt and pepper to taste
- 250 ml (1 cup) mayonnaise
Direction
- Put all the vegetables in a bowl.
- Mix the spices with the mayonnaise whisking until the sauce is smooth
- Pour it into the bowl
- Mix well and serve
